Cinnamon Apple Sultana Loaf

An easy, yummy and low fat loaf with apples, sultanas and the beautiful smell of cinnamon. Perfect for the colder months! Makes 12 generous slices that are delicious for afternoon tea (yesterday at the markets!) or for a lazy breakfast with coffee (my brekky this morning!). Only 185 calories per slice! Hope you enjoy this one! It's a keeper in my book.

Ingredients:
2 medium apples peeled, cored and chopped (I used Gala apples)
1/2 cup sultanas
2 tablespoons water
1 3/4 cups flour
1 cup raw sugar
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla essence
2 eggs
1/4 teaspoon salt
3/4 cup applesauce

Directions:
1. Preheat oven to 180°C and grease a loaf pan.
2. Microwave apples, sultanas, and water in microwave safe bowl for 1 1/2 minutes ( this plumps up the sultanas and softens the apple)
3. Combine apples, sultanas and all the remaining ingredients in a bowl and mix well.
4. Pour mixture in greased loaf pan and bake in oven for 1 hour to 1 hour 15 minutes.
5. When done remove from oven and let sit in loaf pan for 10 minutes before turning it out on a wire rack.
6. Serve plain or with butter.
